The Chouara Tannery is one of the oldest tanneries in the world, its honeycomb of stone dye pits filled with natural pigments - saffron yellow, poppy red, indigo blue - creating one of the most photographed scenes in Fes. Leather has been processed here using traditional methods largely unchanged since medieval times, and surrounding terraces offer views over the vats along with the traditional sprig of mint to offset the smell.
